Tuesday Comfy Cozy Day ;)

We are participating in the International Homeschool Spirit Week this week. Yesterday was homeschool away from home day and we took to the nature trails around here. We also visited the mall, the library and other areas too. We had cub scouts as well. We had a blast although we were still trying to take it easy since Boo Bear was sick this weekend. Today is comfy cozy day and it's perfect timing ;) We are staying home and cuddling together to read, stay in our PJ's and have a great day! Hopefully this will help him recuperate even more.

As far as cooking goes I have been really searching out pumpkin recipes. The first official day of Fall was this past Saturday and this is my absolute favorite time of year. :-) I love the {hopefully} cooler weather, the smells, sights and all the holidays that are coming. So this week I took to cooking some whole wheat pumpkin bread. It is quite yummy! I also am looking at some other pumpkiny type things to cook as well. I have my cinnamon stick candle lit and am ready for some fall weather and festivities.
Here's the recipe:
I took this from 100 Days of Real Food...

1 1/2 cups of whole wheat flour
1 1/2 teaspoons of cinnamon
1 teaspoon of ground ginger
1/2 teaspoon of nutmeg
1/8 teaspoon of cloves
1 teaspoon of baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil
1/2 cup honey
1/2 teaspoon vanilla
1 cup pumpkin puree
1/2 cup chopped nuts (optional)

Preheat your oven to 350. In a large mixing bowl mix all the ingredients from the flour down to the salt. Make a well in the flour mixture and add the eggs, oil, honey and vanilla. Mix with a fork but do not over mix. Fold in your pumpkin puree and the nuts if you use them. Spray your bread loaf pan with non-stick spray or put muffin liners in your muffin cups. Pour the batter into the bread pan or the muffin cups. Cook the bread loaf for 30-40 minutes or until a toothpick comes out clean. Cook muffins for around 18-22 minutes.

These were quite yummy. I made the loaf of bread and it was a hit :) What are you cooking today?
