As far as cooking goes I have been really searching out pumpkin recipes. The first official day of Fall was this past Saturday and this is my absolute favorite time of year. :-) I love the {hopefully} cooler weather, the smells, sights and all the holidays that are coming. So this week I took to cooking some whole wheat pumpkin bread. It is quite yummy! I also am looking at some other pumpkiny type things to cook as well. I have my cinnamon stick candle lit and am ready for some fall weather and festivities.
Here's the recipe:
I took this from 100 Days of Real Food...
1 1/2 cups of whole wheat flour
1 1/2 teaspoons of cinnamon
1 teaspoon of ground ginger
1/2 teaspoon of nutmeg
1/8 teaspoon of cloves
1 teaspoon of baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
2 eggs
1/2 cup oil
1/2 cup honey
1/2 teaspoon vanilla
1 cup pumpkin puree
1/2 cup chopped nuts (optional)
Preheat your oven to 350. In a large mixing bowl mix all the ingredients from the flour down to the salt. Make a well in the flour mixture and add the eggs, oil, honey and vanilla. Mix with a fork but do not over mix. Fold in your pumpkin puree and the nuts if you use them. Spray your bread loaf pan with non-stick spray or put muffin liners in your muffin cups. Pour the batter into the bread pan or the muffin cups. Cook the bread loaf for 30-40 minutes or until a toothpick comes out clean. Cook muffins for around 18-22 minutes.
These were quite yummy. I made the loaf of bread and it was a hit :) What are you cooking today?
