Strawberry Cream Pie-
This recipe comes from my Favorite Brand Names Diabetic Desserts book I have. This is a big hit and a great summer dessert. If anyone in your family is a diabetic or even if you are not then this is a great recipe!
1 package of reduced fat cream cheese, softened
1/4 cup Equal Spoonful
1 teaspoon vanilla
Reduced fat graham cracker crust (9inch)
1 cup cold water
2 tablespoons cornstarch
1 package(0.3 ounces) sugar free strawberry gelatin
1/2 cup Equal Spoonful
1 pint strawberries, hulled and sliced
8 tablespoons of light whipped topping(optional)
Beat cream cheese, 1/4 cup Equal, and vanilla in small bowl until fluffy; spread evenly in bottom of crust. Mix cold water and cornstarch in small saucepan; heat to boiling, whisking constantly until thickened, about 1 minute. Add gelatin and 1/2 cup Equal, whisking until gelatin is dissolved. Cool for 10 minutes.
Arrange half of the strawberries over cream cheese; spoon half of the gelatin mixture over strawberries. Arrange remaining strawberries over pie and spoon remaining gelatin mixture over strawberries. Refrigerate until pie is set and chilled, 1 to 2 hours. Serve with whipped topping, if desired.
This is a GREAT recipe for a summer cookout, or just a girls night out! It is really yummy and I hope you try it!
