Diet Coke Chicken... In the Crockpot (My version)

With two T-Ball practices a week I am finding myself using my crock pot more and more. This means I am trying to come up with more recipes to use in my wonderful cooker. You know this really is a busy Mom's (or Dad's) best friend. If you throw your ingredients in before you leave for work or start your day you will have a wonderful, healthy meal at the end of the day for your family. I am looking for more recipes so if you have one please be sure to share it.

The basic recipe for this creation is one I found on the Weight Watcher's site. It is a great recipe and I have used it many times. Here is the basics:

4 Boneless Chicken Breast
1 Cup of Ketchup
1 12 oz can of Diet coke

Place the chicken in the skillet and pour the sauce ingredients on top. Heat it up until boiling then cover and simmer at a lower temp for approximately 45 minutes. Take the lid off the skillet for the last few minutes to let the sauce thicken. Sometimes my sauce gets thick and other times it doesn't. Not sure why...

Now for the crock pot version I stick the chicken, sauce and some veggies in the pot and let it cook on low pretty much all day. I have added an onion, carrots and potatoes to the mix. It is very yummy and can be served with rolls, rice or pasta whatever your choice. I hope you enjoy this as much as we do.

  1. Wow- I never would have thought of diet coke - wonder if there is a substitute to use for that - or even real coke? My family makes a coca-cola cake that is outta this world!
