Chicken Spaghetti

I honestly haven't cooked this one in a while but it is one of my favorites. I will have to cook it again soon because I think my kiddo would like this too ;) .

Since I haven't cooked it in awhile I don't have pictures of it so I'll share some of him helping me out at other times.

Isn't he a cutie ;)

Velveeta Chicken Spaghetti

1-1/4 lb of boneless skinless chicken breast, cut into strips
2 cups of water
8 oz spaghetti, uncooked, broken into 3 inch pieces
1 bag (1lb) frozen broccoli, carrot, cauliflower blend
1 can (10 oz) Rotel Diced Tomatoes and Green Chile's
1/2 lb (8 oz) Velveeta cheese cut up

Spray a large skillet with cooking spray. Add chicken, cook and stir on med-heat for @ 4 min, or until it's no longer pink.

Stir in the water. Bring to boil. Add spaghetti and cook for 8 min or until tender.

Add remaining ingredients. Stir it until well blended. Cook until the cheese is completely melted, stirring it frequently so it doesn't stick.

I serve this with a nice tossed salad on the side, if you want anything to go with it. It is a very filling dish and makes a lot. Hope you enjoy!!
