Happy Monday Morning! I hope you all had a wonderful Father's Day weekend wherever you might be. We had a nice one here. My boys went fishing with Grandpa and I got Saturday to myself. I went to the farmer's market, the Earth Origins store and Barnes and Noble. I had a wonderful time pricing some of the new items we will begin to cook with on this conversion to the Paleo Diet and also enjoyed just walking around and seeing all the wonderful fruits and veggies. I did try some Yellow Tomatoes this weekend and I really like it. It is less acidic than a red tomato and had a nice taste too.

I tried a recipe out of the Eat Like a Dinosaur cookbook this weekend and my hubby absolutely loved it!! I did too! It was greens and bacon. For us it was spinach and bacon. :) I honestly can tell you that I don't love greens but I don't hate them either. If they are cooked right I can actually love them but I mostly just eat small amounts of then when I have them around. But because it was Father's day weekend and I wanted to try them out... We tried them. They were super yummy and I will be adding them to our rotation now. :)

I am trying to get a menu planner and a shopping list up for the month for this new way of eating. I am thinking we will be full on (with a few exceptions) starting in July. That way we can have a detox month basically and get used to eating that way. I think it will be fun to see the changes in all of us. (I hope ;)) I am hoping I can figure out a budget friendly way to live like this since it can be quite expensive. I know for one thing we won't be able to buy the grass fed beef right away. I checked that out this weekend and.... wow... It was quite expensive. So we are going to do what we can right? :-)
