Chocolate Cupcakes

These cupcakes came from Skinny Taste which you know is one of my favorite recipe sites!! They were so yummy and moist they fell apart in your hands. My whole family loved them and they didn't last very long at all...


Can you believe that those ingredients to the left could make something so yummy?  Yes... Yes they can. ;)

Skinny Taste Chocolate Cupcakes

1 box of Dark Chocolate Fudge Duncan Hines Cake mix
3/4 cup plus 2 TBSP pure pumpkin puree
3/4 cup water plus 2 TBSP water

Glaze:
1/2 cup plus 2 TBSP powdered sugar
4 tsp unsweetened cocoa powder
1 TBSP of milk plus a little if needed to make the glaze smooth ( I used more than a tbsp but just a little to smooth it out )
1/4 tsp vanilla extract
pinch of salt

Preheat the oven to 350 degrees. Line your cupcake pan with cupcake liners. Combine pumpkin and water in a large bowl till mixed well. Add the cake mix and beat for 2 minutes. Remember to get the 16.5 oz cake mix or you will have to adjust the other amounts. I only saw the 16.5 oz package but double check to make sure. :)

Pour the mix into the cupcake liners until they are about 2/3 full. Cook for 20 minutes or until the toothpick comes out clean. Cool them on a wire rack for about 15 minutes. Make sure they are cooled before putting on the glaze.

To do the glaze mix up the dry ingredients. Then add your wet ingredients and mix until smooth. Then put some glaze on the cupcakes. You can put sprinkles on them or just leave them with the glaze. I have also used this glaze on a chocolate cake and it was delicious.
