Cheesy Zucchini Bake

If you have been around here very long you know I try to eat as much low-carb/Paleo/Primal as possible. Mostly around here it is 80/20. And that works for me. I know if I eat much wheat that I will pay for it, so as a result, I try to get away from it as much as possible ;). My mother has recently started her wheat free journey and I'm so proud of her. She is doing well, losing weight and feeling great! I am excited for her. That means we are both sharing recipes more now as we are finding good ones. So this recipe came from her research ;). The recipe I am sharing today came from Kalyn's Kitchen. It was very yummy and one we will make again. My kiddo didn't really like it but I haven't gotten him into squash or zucchini yet. :-). We are still a work in progress. So here's a great recipe for a yummy side dish for your paleo/lowcarb/ primal dinner...


Cheesy Zucchini Recipe

2 medium zucchini cut in slices or half moons
2 medium yellow squash cut in slices or half moons
2-4 TBS of fresh chopped basil. (I used my dried because that is what I had)
2 TBS thinly sliced green onions
1/2 tsp dried Thyme
3/4 tsp Garlic Powder
1/2 cup + 1/2 cup of white cheese ( I used mozzarella as that is what I had on hand. This could be asiago, Romano, pizza style cheese etc)
1/2 cup of coarsely grated Parmesan
salt and pepper to taste

Preheat your oven to 350 degrees. Grease your dish and set aside. Slice your squash. Combine the zucchini, squash, basil, onions, Thyme, garlic powder, Parmesan cheese and 1/2 cup of the white cheese together. Make sure all the herbs are evenly distributed. Place in your baking dish and cook for 25-30 minutes uncovered. When the zucchini is almost cooked through, take the casserole out and place the other 1/2 cup of white cheese on top. Place it back in the oven for 10-15 minutes to melt the cheese. Enjoy!

You could try different types of white cheese on this to vary the flavors. Maybe even experiment with the herbs as well to suit your tastes. There are lots of great things this versatile veggie can do! What is your favorite recipe with Zucchini?
