Zucchini Chocolate Chip Banana Bread

I have been wanting to make zucchini bread for quite a while but never knew how it would taste. Everyone seems to love it. So this weekend I happened to have some extra bananas and zucchini and chocolate chips!!! What a combo!!

I used the recipe that I found at Healthy Eating for Ordinary People.

Here goes:
3 very ripe bananas
2 eggs
1/4 cup honey (I used a Splenda Sugar blend because I didn't have honey on hand)
1/4 cup brown sugar
1 tsp vanilla
1 3/4 cup all purpose flour
1 tsp salt
1 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1 heaping cup zucchini (shredded)
3/4 cup of chocolate chips
Preheat the oven to 350 degrees  and lightly grease your standard size loaf pan.

In a large bowl beat the banana for a few minutes until it is nice and smashed. Add the eggs, honey, sugar, and vanilla and mix together well or until they are smooth. Add in the baking soda, baking powder, salt and cinnamon. Mix to combine then add in your flour. Stir in the zucchini and chocolate chips. Pour your batter in the pan. Cook for around an hour or until the toothpick inserted comes out clean. Cool for about 1/2 hour, if you can, and then set on wire rack to continue cooking.

Diet Coke Sloppy Joes

I am not sure if I have shared this one before with you all but it's the only recipe I really have cooked recently that wasn't something simple like burgers, etc. So I hope you enjoy this. It's really tasty and my hubby would prefer this over the jar stuff. ;) It's also healthier and I got the recipe from SparkPeople Recipes.

Sorry I don't have any pictures. This went really fast last night when I cooked it. LOL Even my son gobbled it up!

Diet Coke Sloppy Joes

16 oz Ground Beef
1 cup Diet Coke ( you could use diet rite or one with Splenda.. This is what I use at times too)
10 TBS Ketchup
1 TBS Worcestershire Sauce
2 TBS White Vinegar
2 TSP Dry Mustard

Brown the ground beef in the skillet and drain. Add back into the skillet with all the other ingredients and stir well. Cook this on low for about 30 minutes or until the sauce is thick.

** I also add an onion and a green/red pepper when I am browning the meat. This just adds some extra flavor and veggie power to the meal. It's really good.**

Antipasto Salad and Zucchini Boats

Okay so I don't have a great shot of this really because it simply went too fast... So I will share this recipe and share the other one I made this week. (I actually got a shot of it :))

The great thing about this salad is you can throw anything into it. I mean anything. The dressing is just so delicious! It's really simple too.

Grab a packet of the Good Seasonings Italian dressing mix, red wine vinegar and olive oil. I'm telling you the red wine vinegar makes all the difference. You can also add some of the McCormick's Supremo Salad Seasonings. This is great too but honestly it didn't matter if I had it in there or not.

When making the Italian dressing switch the vinegar amounts and the oil amounts. I like more vinegar than oil so this was perfect for me. Mix the dressing following the instructions and toss it with your favorite veggies. This for us was broccoli, cauliflower, ham cubes, cheese cubes, celery, onions, cucumbers and tomatoes. You could also throw in some olives and other veggies you see fit. This was so delicious and I love it! I am trying to keep this on hand because it's a great salad for a picnic or dinner. I like that it has no mayonnaise base dressing as I am always worried about taking those to picnics. ;) Some like to throw spaghetti noodles in it as well but I just like the veggies.

These are the Zucchini Boats that you will find over at Gina's Skinny Taste.  This was so delicious and I used her marinara sauce on it. That stuff is awesome!!! This is a great dish for diabetics too because it is low in carbs and tastes wonderful. I really enjoyed it.

Whole Wheat Banana Muffins

Whole Wheat Banana Muffins - Recipe taken from Sisters Running the Kitchen.

My kiddo has been on a banana kick. Which is slightly weird to me but I'm not complaining. See he loved banana baby food and then when he started eating real food the bananas were left behind. (so were the sweet potatoes.) I'm thinking the texture of both were a little too much for him at the time. Recently though he has decided he likes both of them again. (Mommy does the happy dance!)

So we had some bananas hanging around and he wanted to make some banana muffins. Mommy went on the hunt for a recipe that would work with what we have at home and this is what we found. I am in the process of changing all our items like these, cookies, etc to be homemade and not the processed kind. I really don't like the chemicals I see in a packaged product any more and so I am working to weed those out. It's interesting but fun too. :)

So here's the recipe: (side note: the original recipe calls for honey instead of sugar... I was out of honey at the time so I put sugar in and they turned out just as yummy ;))

Whole Wheat Banana Muffins:
1/3 cup vegetable oil
1/2 cup honey( I used sugar)
1 tsp. Vanilla
2 eggs
1 cup mashed up bananas (DS smashed up two bananas)
1 3/4 cups whole wheat flour
1/2 tsp salt
1 tsp baking soda
1/4 cup hot water

Directions
Heat oven to 325 degrees F. In a large bowl beat the honey and the oil together. After combined add the eggs and mix well. Stir in the banana and the vanilla. Stir in the flour and salt in increments. Add your baking soda to your hot water and stir it to mix. Add this to the batter. Spray your muffin tins and fill them with the batter to about 3/4 full. Bake for 20-25 minutes or until your toothpick inserted comes out clean. Move them over to wire rack and cool. Enjoy. :) { Ours didn't make it to the wire rack before we enjoyed. They were super yummy! }

Tuesday's Recipe: Homemade Pancakes



My kiddo loves pancakes... I mean really loves pancakes. :) So when he asks I usually have a premade mix here ready to go. I haven't bought it lately though because we just haven't needed it. I am also trying to get away from prepackaged type items and making it from home.

So Monday when my Boo Bear got up wanting pancakes I quickly searched on one of my favorite recipe sites and found this easy, quick and yummy recipe. I want to try to slowly transfer it to whole wheat flour but I am still learning how to cook with it. So here's the recipe...

Easy Pancakes from All Recipes

1 cup of all purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1 teaspoon salt
1 egg, beaten
1 cup milk
2 tablespoons vegetable oil

In a medium/large bowl mix together your flour, sugar, baking powder and salt. Make a well in the center of the mix and add your wet ingredients. Mix well until smooth.
Heat your griddle/skillet over medium high heat. Pour or scoop your batter into the griddle. Brown on both sides and serve hot.

Now I added a touch of vanilla to ours. I also feel like it was a little salty but I'm not sure if it was the pancakes or the bacon we had with them. If you try them let me know what you think and if you think they are a little bit salty to you.. :) {Maybe I was just being extra weird that day or something. Boo Bear said they were not salty to him. He did eat every single bite of these pancakes ;) }

Chicken Spaghetti

I honestly haven't cooked this one in a while but it is one of my favorites. I will have to cook it again soon because I think my kiddo would like this too ;) .

Since I haven't cooked it in awhile I don't have pictures of it so I'll share some of him helping me out at other times.

Velveeta Chicken Spaghetti

1-1/4 lb of boneless skinless chicken breast, cut into strips
2 cups of water
8 oz spaghetti, uncooked, broken into 3 inch pieces
1 bag (1lb) frozen broccoli, carrot, cauliflower blend
1 can (10 oz) Rotel Diced Tomatoes and Green Chile's
1/2 lb (8 oz) Velveeta cheese cut up

Spray a large skillet with cooking spray. Add chicken, cook and stir on med-heat for @ 4 min, or until it's no longer pink.

Stir in the water. Bring to boil. Add spaghetti and cook for 8 min or until tender.

Add remaining ingredients. Stir it until well blended. Cook until the cheese is completely melted, stirring it frequently so it doesn't stick.

I serve this with a nice tossed salad on the side, if you want anything to go with it. It is a very filling dish and makes a lot. Hope you enjoy!!

Asian Meatballs With Lime Sesame Dipping Sauce

Have you checked out the wonderful recipes over at Skinny Taste? Gina is awesome. I just want you to know that. If you're on Weight Watchers or just want healthier versions of your favorites, she is the girl to check out.

I have made several of her recipes and they are all good. The one we made last week were these Asian Meatballs and her fried rice recipe. Oh my! Boo Bear had the best time cutting veggies and helping me get the food all ready. I had pictures... I'm not sure where they went BUT I did take some. LOL

Okay here's the recipe. You can stop by her site to check out her pics of these yummy little bites here.
One little side note... She uses ground turkey. I did not. I haven't used it a lot since I first got married and made burgers out of it. They turned out grey... Grey burgers... That's the only thing in almost 9 years of marriage my hubby asked me NOT to make again. LOL So I'm still trying to get the courage up to using it again so I used ground beef in my recipe. They were still delicious...

Asian Turkey Meatballs

1/4 cup panko bread crumbs
1 - 1/4 lbs ground turkey (or beef)
1 egg
1 tbsp of ginger, minced
1 clove garlic, minced
1/2 tsp salt
1/4 cup chopped fresh cilantro (i used my cilantro in a jar)
3 scallions, chopped
1 tbsp low-sodium soy sauce
2 tsp sesame oil

Dipping Sauce

4 tbsp low sodium soy sauce
2 tsp sesame oil
2 tbsp fresh lime juice
2 tbsp water
1 tbsp chopped fresh scallion


Preheat the oven to 500 degrees.

Mix the ground turkey, panko, egg, salt, scallions, ginger, cilantro,1 tbsp soy sauce and 2 tsp oil and mix with your hands until well combined. Shape 1/4 cup of the mixtures into a ball and transfer to a baking dish. Repeat with the remaining mixture. Bake until cooked through for about 15 minutes.

For the dipping sauce you will mix together the lime juice, soy sauce, water and remaining t teaspoons of oil. Add your scallions.

Move the meatballs to a serving dish and drizzle with about 1 tablespoon of the sauce.

Serve the meatballs with the remaining sauce. This will make 12 meatballs.

These are soooo yummy. My son loved them, I did and so did my hubby. :) They are great with Gina's skinny fried rice that you can find here.

Lemon Ice Box Pie: Diabetic Friendly!!

I love this week's recipe! Love it!! I enjoy a good lemon meringue pie but if I'm honest, I haven't figured out how to master it to be diabetic friendly yet. This recipe has been around in my family long before any of us were diagnosed. I'm not sure if you have ever heard of the First Place diet program but that is where my mother got this recipe. When I was diagnosed she made sure to place it in my recipe book she made me when I got married. That book has since grown to three times the size of the book she started. BTW Today is my Mother's birthday. Happy Birthday to the woman who taught me how to be a wife, mother and a friend to everyone. May your day be as special as you are to all of us. :)

Now for the recipe. This is really easy and a great summer dessert whether you need the sugar less version or not. :) Please overlook the pictures because I found out if you lay down your iPhone while the camera is on it turns the camera and takes the picture from a different way... These aren't the greatest but you'll get the idea ;)

Lemon Ice Box Pie


2 cups of skim milk
1/2 tub/stick of Crystal Light Lemonade mix, dry ( I use a whole one because I like it more tart. You can use other brands too.)
1 large box of vanilla sugar free instant pudding dry
8 ounces of cool whip
6 graham cracker squares (3 inch)

Layer your graham crackers in the bottom of an 8x8 inch baking dish. In a mixing bowl stir pudding and lemonade powder together then add milk and mix on low speed of a handmixer.
Add three- fourths of the Cool Whip. Pour the mixture on the graham crackers.

Top with remaining Cool Whip and refrigerate until ready to serve.


This is a yummy light dessert and it is very simple to put together. Like I mentioned my family likes a tarter lemon dessert so I used the whole tube of a lemonade mix. You can use 1/2 or so to get it to your liking.

Tuesday's Recipe

Howdy! Welcome to Tuesday's recipe link up. This week will be another post where I share some awesome looking recipes. Some I might have tried, others are on my to do list ;). This weekend was super busy with my sweet boys birthday, mother's day and family in town. So I haven't tried anything really new. But here are some great looking bread recipes I want to try and would love to know if you have tried them too!

The first one I saw this week was Raspberry Dark Chocolate Banana Bread from Recipe Boy. This has all of my favorite ingredients and looks sooo yummy. I can't wait to try this one. It just looks so tasty and sinful doesn't it?

I have always wanted to try zucchini bread. I always see recipes for this and it looks so yummy. Have you ever made this type of bread before? At first I thought zucchini in bread?? Eww. But the more I like at recipes like this one from Nancy Creative called Lemon-Zucchini Loaf I am more and more tempted to believe it is a taste I must try! Oh and this one has a yummy yummy lemony glaze on top. yummmmmm

I tried these yummy dinner rolls a week or so ago. I was thinking I shared these with you but I can't seem to find my post. Maybe my brain thinks I did and I didn't get it done. Maybe I did it and my brain has just decided not to remember where I put it. My brain is kind of fried today! ;) I told you it's been busy here!

Tuesday Recipe Finds

Well today I normal share a recipe I tried out. I did try at least one out this week but I'm still out on whether I really liked it or not.

So I thought I would share some awesome Pinterest recipes I have found this week and see what you guys think. Let me know!!

So since my kiddo's birthday is this weekend I have been looking at cupcake recipes. This Cinnamon Toast Crunch Cupcake recipe looks yummy. My son loves cinnamon toast crunch and secretly... I do to:) These do not seem very hard at all and look divine!

This next one is the one I wish I was making this weekend. I still might ;) They are so cute! I just absolutely love them! They also look like loads of fun to eat as well :) They are Ice Cream Cone Cakes. Have you ever made any of these? Do you have any tips for those of us who would like to:)?

No. This is not an advertisement for Betty Crocker but here's another good looking dessert from them. This one is Strawberries and Cream Dessert Squares. It looks so very yummy and would make a great summer dessert.

This last one is absolutely adorable and easy too! It's called Sweet Acorns. Have you seen this one around? It would make a great party snack for your children's parties in the fall or just an extra special afternoon treat.

Homemade Dinner Rolls

I love the smell of fresh bread cooking. I haven't done so great on getting the recipe just quite right with some of the breads I have tried but this one worked perfectly! I was so excited as we used these for the slider burgers my hubby grilled this week. I have heard they are great with honey butter too but these were perfect for our little burgers.

I grabbed this awesome little recipe from Plain Chicken through Pinterest. I have to say I love Pinterest. It's awesome! Wahoo!!! Okay, there I said it. Glad that's over with.

Okay to make these awesome, easy dinner rolls here's what you need:

1 cup plus 2 Tbsp warm water
1/3 cup oil
2 Tbsp yeast
1/4 cup sugar
1/2 tsp salt
1 egg
3 1/2 cups bread flour (can use all-purpose)

Preheat oven to 400 degrees.

In the bowl of a stand mixer combine water, oil, yeast and sugar. Stir to combine and let rest for 15 minutes.Using your dough hook,at medium speed, add salt, egg and flour. Knead with dough hook until flour is thoroughly mixed in and the dough is soft and smooth (approximately 2-3 minutes). Divide dough into 12 balls and place in a lightly greased 9x13 pan.  Let rest for 10 minutes.

Bake 10-15 minutes until golden brown. Our's took closer to 20 minutes to get the good golden brown color but they are delish! Hope you enjoy them!

Tuesday's Recipe: Mini-Corn Dog Muffins

This week's recipe was a big hit in my house and very easy :) Those two combined make for a happy mama when trying out new things:

Ingredients:
(makes 48 mini muffins)
1/2 cup melted butter
1/2 cup of sugar
2 eggs
1 cup buttermilk
1/2 tsp baking soda
1 cup cornmeal
1 cup all purpose flour
1/2 tsp salt
8-10 all-beef hot dogs cut into 1" bites

- Preheat your oven to 375 degrees. Combine butter and sugar in a bowl, whisk to combine them. Add eggs and whisk to incorporate. Add buttermilk and whisk.

- Combine baking soda, cornmeal, flour and salt in another bowl. Whisk into your wet ingredients in two separate batches.

- Spray a mini muffin pan with non-stick spray. Spoon 1 Tablespoon of batter into your muffin cup. Put one hot dog bite into the middle of the cup.

- Bake for 8-12 minutes or until your cornbread is nice and golden brown. Cool for 5 minutes in the pan and then on a cooling rack. You can store the leftovers in the fridge.


Aren't they cute? I had to snap this before they were gone. I'm telling ya.. These went fast here ;)

Whole Wheat Raisin-Coconut Muffins


I was trying to grab a recipe out of my many books that Boo Bear could cook with me. So at lunch yesterday I was looking through my Better Homes and Gardens cookbook and came across this. I tweaked it a little to fit what we have here but there were so many options.You could take it sweet or savory and we chose sweet. I used the whole wheat flour version because I am a diabetic and trying to do it the most healthy way I can. I am not sure if you could use Splenda instead of the sugar but I'm going to try it later. I do know my experiences cooking with Splenda, (baking anyway) doesn't turn out the nice rising effect you get with sugar. I'm still learning how to do it with Splenda and coming out pretty and brown :)
Tried to get Boo Bear To cook with me ;)



The call of chasing the hound dog was just too much though so he bailed quickly after ;)

Raisin Coconut Muffins

Ingredients:
1/2 cup all purpose flour
1 1/2 cups whole wheat flour
1/4 cup granulated sugar
1 1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
2 eggs lightly beaten
3/4 cup applesauce
3/4 cup milk
2 TBS butter, melted
1/3 cup raisins, (or your favorite dried fruit)
shredded coconut

Directions

Preheat your oven to 400 degrees. Spray 12 muffin cups and set aside. Mix your flour, sugar, baking powder, baking soda and salt together in a medium bowl. Make a well in the dry ingredients and set aside.


In another bowl combine your eggs, milk, applesauce, and butter.

Add the egg mixture to the flour all at once and stir just until moistened. Fold in your stir in choice. For us it was raisins because that is what we had on hand. You could use blueberries, cranberries, apricots. Whatever you like.
Spoon batter into prepared muffin pan. Here is where I added some sweetened shredded coconut. The original recipe called for streusel topping and coconut but I was out of brown sugar. I just topped it with coconut and tossed it in the oven for around 15-18 minutes. Cool in cups on wire rack for 5 minutes then remove from pan. Serve warm

They are not overly sweet so you could try different things with them. I enjoyed them because they were a nice texture but not so sweet that you couldn't enjoy them. Course sweet muffins are great too ;)

Tuesday's Recipe Review

I have tried several new recipes recently and I thought I would share with you what I liked and what I kind of liked but not sure yet. ;-)

The first one we tried was a huge hit! Even my son who doesn't typically like mexican food loved it. It was super simple and easy. The amazing thing is that it goes in the crock pot, smells your home up so that you are drooling all day and it tastes even better! What is it?

Crock-pot Chicken Fajitas! Fajitas? In the crock-pot? Yep!!! So easy and so delicious.

I first got the recipe by finding it on Pinterest. {Isn't that the case lately?} Stacy, over at Stacy Makes Cents, shared this recipe and I have to say I love it. If you're looking for a great recipe for a busy weeknight this is it. Be sure to stop by and have a giggle as you read her great post on this and try it yourself! The other recent recipe I tried was a black bean salad. This is the first time I have really tried a bean salad. My hubby is a MEAT EATER. All the way :) No veggie dinners here I'm afraid. ;) Not unless I sneak them in and he doesn't know about it. SO... I tried this recipe for myself for a picnic we had last week. I am kind of tossing and turning on my decision about this one.

I'm not totally sure on this one. I liked it but I'm not sure if I would fix it just for myself again. Hubby is a no go because the recipe calls for avocado and he's not a fan. He just can't get past the "what guacamole looks like" to him phase. I actually omitted the avocado because the one I had did not taste good...

Polynesian Meatballs

This recipe has quickly become a favorite in our house and to be honest, I am not sure why I don't cook it more often. It is so very simple! Everyone here loves it and I hope you and yours do as well.

I got the recipe over at Kraft Foods a long time ago. There are several variations to the recipe but I have only tried this one since it was such a big hit!Your kiddos can help you in the kitchen by chopping up the peppers for you. I let my son do this for me so he has practice with the knives that are not sharp and learns how to handle them.

1/2 cup of BBQ Sauce
1 (20 oz) can of diced pineapple in the juice
2 cups of chopped green pepper
1 (12.5 oz)  package of frozen meatballs
brown rice or pasta to serve it on

Mix the BBQ sauce and pineapple chunks with the juice in a large skillet. Bring to a boil. Make sure to stir it often so it doesn't stick.  Stir in the peppers and meatballs. Simmer on low for about 15 minutes or until your meatballs are heated through and the peppers are tender crisp. Sauce will thicken.

Serve it over your favorite brown rice or pasta.

Kidz in the Kitchen: Fried Eggplant

First off sorry for no pictures. These went pretty quick. LOL I HAVE to start taking more pics of these recipes...

Okay... So I have only tried Eggplant twice now. I like trying new veggies and exploring the bountiful choices that are out there. Trying to buy in season can be interesting when you are not sure what to do with that yellow melon that you have never heard of before. The bumpy squash that kind of looks a little scary... What do you do with it?

Well our first dive into eggplant wonderland was not a good one. Okay my dad liked it this way but not many of us did. ;-) We first had my hubby grill the eggplant. Well it turned out mushy and just not... great... My hubby is the king of the grill so for us it was kind of weird. I think that is the only thing he has ever taken off the grill that I didn't like.

So my parents were visiting and we got another eggplant and I tried cooking it this time. I tend to buy new things like that when my dad is here because our tastes are very similar and he will at least try it with me. LOL He grabbed an eggplant at our local produce stand and brought it home. I thought.. why not fry it?

So I ran to the trusty old computer and searched how to fry it. I have seen several that say you have to be careful because the eggplant will soak up the oil and turn it into mush. So this is what I did...

1 eggplant
1 egg
1 cup of bread crumbs
1/4-1/2 cup of fish fry
enough oil to cover the bottom of your pan

Slice the eggplant into french fry type pieces. I cut mine just like I would if I were cutting a potato to make fries. Try to make sure you get them as close to the same size as possible. This will help them cook evenly about the same amount of time. Beat the egg in a bowl and toss the eggplant pieces in the egg. You can put the breading mix in a ziploc bag and shake or you can toss them in a bowl. Heat your pan up for frying and place them in the skillet. Brown on each side and drain them on a paper towel. These tasted so much better to me than the first time we cooked them. I want to try them again only using Parmesan cheese mixed in with Italian bread crumbs !!

Ham and Cheese Pinwheels




These are so easy and are a great recipe to have your children help you with. :-) My kiddo was too busy helping daddy with the tools to help me but he would have had an easy time with them.

Ham and Cheese Pinwheels

1 Can of 8 Crescent Rolls
16 slices of ham or turkey lunch meat
cheese of your choice, shredded, slice or crumbled

Preheat the oven to 375'. Spray a cookie sheet with non-stick spray. Separate the crescent rolls into 4 rectangles. Gently pinch the seams together and spread the dough out a little. Place 4 slices of meat and your cheese on the rectangle. Roll the crescent up starting with the short end of the rectangle. Pinch the seam together to make it nice and sealed. Using a serrated knife cut each log into 5 pinwheels and lay on the cookie sheet. Bake in the oven for 15-20 minutes or until brown.

These are super simple and there are so many different combinations you could use. I got the idea from the Pillsbury site and used ham and cheese instead of the ingredients the original recipe calls for. We are thinking next time of using some spinach leafs, blue cheese and bacon to try. What are your combinations? Let me know if you come up with some delicious ones to try!
